But, yeah, my idea of cajun food is really spicy, shrimp, cajun dog, hot saussage...

So here is my general idea:
all round the mediteranean sea = awesome food.
Northern central europe = humm.... you're gonna have trouble to find good stuff
eastern/south asia = awesome food
any tropical island = awesome food
south/central america = awesome food
north america = some good stuff coming from where people come from but not as good as the originals.
Northern Africa/middle east = awesome food
"black" africa = just tried ethiopian which was really good, don't know any other yet..

Maybe for northeners, but their food is shit.
Northern french cuisine is all about butter and cream, southern is all about olive oil.

northern and central european food isn't all that bad, though it probably depends on your preferences.
It's just more about the meat and the fish, rather than the vegetables and the herbs.

I personally love the many german meats!! Fits perfect with some french fries :P

I know that northern french food sucks compared to southern french food 8-)
So you wouln t agree that you guys use more butter/ cream and we use more olive oil? I wonder who knows nothing john snow.

Olive oil only means you look like italian food :)

And well, no way northern french food sucks compare to southern one, please come my home and try one carbonade flamande, then you'll know we actually make much better than you do ! Wont go too much on the topic, was just utterly schocked by your first words, totally undeserved !

olive oil is not italian it's all around the mediteranean sea. Personally, I think the best olive oil is the spanish one.
Also, I talk about butter vs olive oil, but it's actually butter (north) vs olive oil (south east) vs duck fat (south west). South west food is really good... they got foie gras, cassoulet, roquefort, alligot, anything related to duck and goose basically and most of the best french cheese.
We have the bouillabaisse, soupe au pistou, pissaladiere, tapenade, caviar d'aubergine, and our way to prepare fish or meat with olive oil, garlic, parsil, and all the herbs wee got beats the north!!!! :p

oh yeah, and the lyon region is great too... The best for pork products for sure. Not to mention quenelles... I so love these.

Oh and I love fondue (bourguignonne or savoyarde)

I've only occasionally eaten dead people (Rationing went on weirdly long in my home town.) Nobody has loved fondue since the 70's.

isn't carbonade flamande belgian food instead of northern french food? hence the "flamande", which means "flemish"(= dutch part of belgium)

Roquefort good? I tasted it once and I immediately spat it out. There is no cheese worse than Roquefort.
The best french cheese is from northern france! I'll take Brie over Roquefort anytime of the year!

Lille is actually often called "Capitale des Flandres" dunno if we are referring to all or only french part, but flanders aren't only in Belgium. But it is true we definitively have lot of common dishes since we both have somehow flemish culture.

Betiko, have you even tried Maroilles? One of my favorite cheese, but a bit strong for people in south maybe, you are all pussies there isnt it? :D :D
Well I have to agree on south east food, really good. And I won't critizice south one, I actually like most of the things you quoted.
But please, fat is good :) We do put bier and fat in some of our dishes but they are excellent. You need to try one maroille pie, you may be surprised.

Winter is coming, and notherner may well kick your ass, gastronomically speaking of course !

Roquefort is the king of cheese. No cheese in the world comes even close to roquefort. I always have my roquefort at home, and I feel naked when I'm some place that has no roquefort. If you spitted it out the first time, you might need to try it over and over again until you like it. ROQUEFORT RULZ

you put your cheese slice in the tray until it melts, ya open your potatoe and put the melted cheese on it. you eat it with ham on the side or whatever delicatessen you fancy.

- doesn't have to be fried/deep fried, but usually is.
spices/seasoning: cayenne, onion, garlic, salt, black pepper---stuff like that.
+ hot sauce: vinegar, peppers, some salt, maybe citric acid, etc.


But that's not exclusively Cajun either---it could count as typical food you get in Louisiana, which no one really considers to be Cajun food... You get Cajun food with the Cajuns out in the boonies (fried mushrooms, fried bread, fried catfish; an interesting mix).

you usually do this at home BBS. Typical winter dish easy to do when you invite friends over. Mostly when you go skiing.
