I suppose My genes dictate I should like Hvarti, but I don't.
In truth, there are not many cheeses I dislike, except American and that concoction otherwise known as "Velveeta". Some day, I plan to visit France and explore....

I've developed a taste for goat personally. Although Monterey or Pepper Jack is great too.

France has been all mapped out. You should talk to oceanographers or NASA if you really wanna explore. Maybe there's still some stuff in the Rain Forests though too.

At least the decent cheese had time to mature.
And the American cheese has gone of long ago.

I think he meant "explore" the cheese, not explore the land.
Charles de Gaulle wrote:How can anyone govern a nation that has two hundred and forty-six different kinds of cheese?
That's only the "known" cheese, who knows what secret cheese lurks in the heart of France? I don't think all the cheese of England has been mapped out yet. I mean how many knew of Stinking Bishop before Wallace and Grommit discovered it?

My book on French Cheese, Fromage Pour Chacque Jour lists (unsurprisingly) over 365 French cheeses.
[edit] - that I own, I mean. I haven't written any culinary masterpieces in French...
