So if I smack you in the face after the ref whistles for offside I should get no card?

Well you could argue that dangerous play is still dangerous play even when the game is supposed to be dead. I read something about a ref wanting to blow the whistle for a throw-in but a player hadn't noticed and made a slide at the person with the ball (who hadn't stopped playing yet) and injured him. The player was sent off because his action was still bad.

This is not about a whether play should have continued, a yellow card can still be given even if out of play. I think the ref just reconsidered whether he really should give it, seeing as it would result in a red card, the play should have ended and any other factors. Honestly, I'm just guessing as I have no idea about his actual reasons, but it was certainly not merely the fact play should've ended. (At least, that's no good reason.)

it does not really matter any more as the Ref and linesman will say he linesman spotted it was not a foul and the ref will say he took his advice and then they look like the dogs bollocks.

I read today that of the 390 minutes of gameplay they've had, the only managed to be ahead a whopping 9 minutes. They still won 3 games....
