I'm not some grazing mofo. I eat anything and everything. I have no idea what it is exactly that a veggie couldn't do without.

My wife was a vegetarian when we met. Eventually she started to eat a little chicken now and then. About two years ago, I was enjoying a nice veal parmesan and she was not enjoying a salad with chicken on top. She asked to taste the veal. She now gets veal parmesan every time we go to an Italian restaurant.

Not a vegetarian, but lived with and around plenty in my college years.

Rice, beans, potatoes and spaghetti would be the big things. If not vegan, then cheese is heavy.

If you mean whole dishes-- burritoes/spaghetti/and stir-frys for the "college" set (lasagna and/or salads for company). Once people are making money, they tend to go more for the "whole foods" type stuff --- maybe some Fantastic Foods Falafels, roasted Portabella (can be quite fancy), basted tofu (really can taste decent if cooked right .. its a "cameleon" food), lasagna, Polenta, and various other dishes without names (names I know, anyway... lol)

I raised veal as a kid.. some of the most spoiled animals on earth (yes, we definitely knew where they were headed.. we were farm kids).

When my wife was a vegetarian we used to go to this little place near where we went to law school. It was sort of vegetarian Chinese. Chicken and beef were replaced by tofu. It was actually pretty good.

When I met my current girlfriend - she was a veggie. I realised early on that this would be a massive problem if we were to have a future together.

Whilst we we're in the honeymoon period, I took her for a curry and ordered something I rarely eat.
Chicken tikka as a starter.

It came up all sizzling on a hot plate. the air was full of a lovely smell. She was tasting it before it was in her mouth....
Sure enough I managed to get her to try a small piece.
it tasted as good as it smelt.
Only got her to eat chicken, but that's made things a whole lot easier than me eating dead animals, whilst she cooks something totally different.

Why do vegetarians choose to be vegetarians? Has there been a study on this? My wife stopped eating meat because it was "unhealthy." Her decision had nothing to do with kindness to animals or any of the other strange (in my opinion) reasons.

vegetarianism saves a hell of a lot of water and energy... raising livestock to produce meat wastes a lot of energy that doesn't end up on the plate, as opposed to eating plants. that's the only reason i can think of to be a vegetarian, except MAYBE animal cruelty, but that's a stretch.

It's gotta be salad. Because salad fills you up so that you don't have to eat so much of all that other stuff that tastes like crap.

I know there are studies out there, but I also know the numbers tend to vary as times change.

The main reasons people switch are "for health" , because they feel it is better for the environment and "sympathy".
A few people just like vegetables better, do it to cut costs, etc.

This is not really true, though a lot of well-meaning and educated people have claimed this (they were looking at only pieces of the picture).

It is true that feed lot animals, "factory farm" raised animals are a drain, but so are corn and soy planted with aid of every pesticide and herbicide known to mankind, etc. Crops are a HUGE drain on water, particularly out west.

What we need is not people going vegetarian for the ecosystem, we need people willing to pay a tad more for meat, produce and fish raised in sustainable ways.

That said, most americans could do well to eat less meat.

I have heard that beans are very important in a veggie diet. Something about the proteins in them being ones found nowhere but in meat and beans.

I'm pretty close to my cousin who is a vegetarian and used to be a vegan. Nowadays she will eat fish every other week or so, she says veterinary school is what made her drop veaganism.

For Veagans like inklosed said Soy is a staple since you can mix it into allot of different dishes ,Beans, pastas, veggies, peanut butter, humus, fruit, grains, bread and that's about it but there allot of creative and delicious ways to cook those things. If they are a vegetarian add eggs, cheese, dairy products and anything else that doesn't involve killing an animal.

All of the vegetarians / vegans I've met have all chose their diet for ethical reasons. Basically they think it is unethical to kill another living being for food. Vegans take it a step further and say it is unethical to exploit animal's bodies for food (almost marxist in a way).

The "its healthier" argument isn't really true, you have to be very careful in order to make sure you get all the proper nutrients in your diet (I've seen how carefully my cousin figured out her meals) and if they don't get it right they can have health problems and tend to be more susceptible to illness. However if you take a vegetarian diet and add meat about once a week I think you have just about the healthiest diet around.

that said, I ate a shit-ton of soy products, which have really come a long way in the past decade. I recommend boca spicy chicken patties, they be all tastin good n shit.

I agree with Players' point about the need for sustainability, both relating to the cultivation of livestock and crops. CAFOs (Controlled Animal Feeding Operations) need to be stopped, the sooner the better. Yes, this will mean that your bacon will be more expensive, but the alternative is a world covered in putrefied pig shit.

I eat a lot of grains, with a lot of veggies (and mushrooms in everything it seems; wonderfood). I'm not the healthiest vegetarian, I suppose, but I get by. I need to work on my fruit intake.
