naturellement, I would use a capon if one was available (not easy to come by) - but the dish is still called 'coq au vin'.

For what it's worth (approximately 1 trillion*), if an American had started this thread, the first option would not have been raw steak; it would have been raw grizzly bear killed with a shotgun. But since you don't have shotguns or much available forested land in England, I suppose it's difficult to get any manlier than raw steak. How do you guys even have cows when the land mass of the UK is roughly the size of New Jersey*?
